<p>When I was in London there are so many stars. Mick Jagger, Jerry Hall, Pete Townsend, Kylie Minogue, Madonna, David Bowie to name just a few.</p>

<p>Coming in too hungover.</p>



<h2 class="wp-block-heading">You’re tired, starving, and impatient: what do you cook for dinner? </h2>



<p>Noodle soup.</p>

<p>Lots of small seafood plates from oysters, scallops, clams, lobsters, any fish from raw to cooked.</p>

<p> Anything local to where we are holidaying as I love to immerse myself in the culture through food and wine.</p>



<h2 class="wp-block-heading">What mistake do inexperienced cooks tend to make? </h2>



<p>Working for money rather than the quality of the workplace.</p>



<h2 class="wp-block-heading">Favourite ingredient and why? </h2>



<p>Quality soy sauce. It adds just an amazing punch of natural umami that makes anything you add it too more flavoursome. Use in dressings, sashimi, stew, or I even add it to my Bolognese.</p>



<h2 class="wp-block-heading">Most overrated ingredient? </h2>



<p>Gold leaf, I am not sure that I could ever find a time or place to use it. Oh, and truffle oil.</p>



<h2 class="wp-block-heading">The dish you’re most proud of creating? </h2>



<p>The Rockpool for GBM. It was for the mighty WI, and it was about representing family values. My favourite past time with my son Joe on a day off is to go rock pooling.</p>



<h2 class="wp-block-heading">Tell us your best cooking tip? </h2>



<p>Taste, and keep tasting as you are cooking to make sure you are getting the balance and seasoning right on a dish.</p>



<h2 class="wp-block-heading">Three dishes every home cook should master? </h2>



<p>Roast Chicken, Beef Stew, Fish Pie. Three dishes that everyone loves.</p>

<h2 class="wp-block-heading">Can you tell us about Porthleven Food Festival &#8211; what should we expect? </h2>



<p>We’re so excited to be back, and restriction free. We really want to shake-up our foodie offering, and we’re so proud of the Chef’s Theatre line-up for 2023 – it’s the best yet!</p>



<p>We’re talking the likes of Adam Handling, Tom Barnes and James Knappett – just to name a few. I’m sure visitors will be eager to watch these chefs strut their stuff, and share their knowledge, on stage.</p>



<p>Plus, a full programme of festivities, for all the family, from Bloody Mary’s and Breakfast Pasties in Ann’s Pasty Lounge to the brand-new Feasts in the Net Loft, incredible local music at the Evening Sessions, a new Makers Market – and heaps more to explore! It’s a whole town takeover, and we can’t wait to welcome everybody to tuck into three days of incredible fun.</p>

<h2 class="wp-block-heading">What does it mean to you to be the 2023 Chef Patron for Porthleven Food Festival? </h2>



<p>It means a lot to be the Chef Patron of a food festival, it’s a personal project for me having come up with the idea for the event back in 2009. With a small committee and a lot of local volunteers, we managed to have a successful first year despite the weather doing its best to disrupt us. 14 years later we can see how it has grown into one of the most popular foodie festivals in the South West – which is brilliant fun for everyone that comes along, but vitally helps to stimulate the local economy too.</p>



<p><em>Jude&nbsp;Kereama&nbsp;is the head chef at Kota Restaurant&nbsp;and the 2023 Chef Patron for Porthleven Food Festival.</em></p>



<p>Kota Restaurant holds a Bib Gourmand Award, AA three Rosettes&nbsp;and is listed in Harden&#8217;s Top 100 restaurants in the UK 2022, UK TOP 100 Squaremeal 2022 and The Good Food Guide.</p>
